4 Easy Meals to Enjoy Before Thanksgiving Day!

With one of the biggest and most intimate family holidays in America just two days away, everyone is anticipating reuniting with loved ones and indulging in their favorite traditional dishes. 

This year, I intended to host thanksgiving dinner at our new home but when my beautiful dinning room table arrived broken, along with a laundry list of other events, I decided to change our plans. We will be guests instead of hosting.  

I am all about creating fun new memories with my daughter, especially during the holidays. Despite our altered plans, I still wanted to do something special in the kitchen to build excitement and for good memories before taking time with family and friends.  

Since most schools are closed for the week, and with all the hustle and bustle to prepare the for the thanksgiving holiday, here are 4 easy pre-Thanksgiving dishes to enjoy before the big day. 

Breakfast

pastrami + bacon breakfast croissants

  • Large croissants
  • Red onions
  • Avacado
  • Pastrami beef round 
  • Pastrami turkey
  • Aged cheddar
  • Applewood bacon, or turkey bacon

Boil two eggs on medium heat for 10 minutes for a bright yellow color.  Place 2 slices of the bacon in the toaster oven and cook until crisp. In the mean time, toast croissants  with butter in a grilling pan. Slice or smash ripe avocado, add salt to taste, and spread on each of the croissant halfs. Then layer turkey, cheese, beef, onions, bacon and sliced boiled eggs onto the croissant. Cut in half or quarters and enjoy. 


Lunch

wings + things

  • Roasted wings
  • Collard greens
  • Mac & Cheese
  • Sweet potato home fries

Carry out is in order for this meal. Order your favorite carry out wings and sides. I added my own home sweet potato fries. Simply cut potatoes into the desired chunks, fry and season with sea salt and herbs to taste. Lately, I am into PostMates and Uber Eats to save time going out to pick up carry out. I find the delivery price to be very reasonable and its very convenient.  


Snack

figs + yogurt

 

  • 3 figs cut in half
  • 1/3 c. organic whole milk yogurt
  • the zest of 1 lemon (use a cheese grater or micro plain to scrape ONLY the bright yellow skin from the lemon; the white part is bitter 🙂 ).

We are all anticipating our annual favorite heavy duty desert on Thursday. Instead of going all in prior, figs and yogurt drizzled in raw organic honey, topped with lemon zest is an absolute delight. 

Place halted figs on a place, Add yogurt to the plate and drizzle with honey. Top the dish with lemon zest. 


Dinner

jazzed up baked sweet potato

  • Bacon bits
  • Shredded cheese
  • Diced rosemary, thyme, sage herbs

This is the absolute easiest dinner. Bake a large sweet potato until soft through and through. Cut in half, add butter, salt, bacon, cheese and herbs to both sides. ENJOY!
