Christmas Fun Finger Food

It’s beginning to look a lot like Christmas. Really it is! For a couple of years, I’ve been wanting to travel some place where there is snow during Christmas time. Low and bold, snow came to us this year. I am so thrilled! For all my northerners and those living where snow is a nuisance, we southerners can’t relate and we enjoy rare snow days. 

With Christmas Day two weeks away, schools will be out on Christmas break soon and as parents, we need a food and fun plan intact and ready to go.

As much as kids like keeping busy, I am convinced they get exhausted and need down time. They prefer a reason to sit still and enjoy not having an on the go activity.  To kick off the holiday break I am starting with lounging, munching and movies. 

Here is a sample menu to spark some ideas when planning your holiday fun that I hope you will enjoy.

lemon chicken nuggets

Chicken nuggets are staples for kids. It’s a soft bit and fits perfectly in tiny hands (maybe I’m having falshbacks of my daughter tiny years). Nonetheless, kids of all sizes love chicken nuggets. Homemade chicken nuggets are supper easy and you KNOW what’s in them and one them.

  • 2 skinless chicken breast
  • 1 cup of coconut oil
  • 1 cup of panko bread crumbs
  • 1 tsp of salt (or to taste)
  • 1 tsp of black pepper (or to taste)
  • ½ lemon
  • ¼ cup of parmesan cheese
  • Sprigs of fresh herbs

Instructions: Add oil to a fryer pan or medium pot under medium heat. Place chicken breasts on a plate and season with salt, pepper and a light squeeze of lemon. You can prep this ahead of time and refrigerate allowing the meat to absorb the seasoning. On a cutting board, cut the chicken into bite size square chunks.

Place the panko crumbs in a food processor or blender (I use my nutribullet with the dull blade). Blend to a flour texture. Mix the panko flour with the chicken chunks until all the chicken is fully coated. If the oil is hot and ready, add a hand full of the chicken to the hot oil. Don’t over crowd the pan but add small batches at a time for a crispy texture. When golden brown, remove from the oil and place on a plate with napkins to absorb the excess oil. While hot sprinkle parmesan cheese and herb sprigs and another light squeeze of lemon if desired. Serve in these fun CB2 appetizer plates. I purchased these last Christmas but they have even better designs this year.

chocolate peppermint pretzel rods

For ease, you can purchase candied pretzel rods or make them. I made these with my daughter and her friends.

Instructions: Roll pretzel logs in melted chocolate and sprinkle while wet with crushed peppermint candy. Allow to set for at least 30 min and enjoy with your favorite hot coco or chia tea.
