The real reason I am into low carbs

If you follow me on Instagram, you may notice that I share a lot of our Sunday brunches in stories. And occasionally I share our dinners as well. Most times these meals are low carb. Keeping my carb intake low is not a fad or trend for me, but it is a lifestyle for health reasons.

The reason for being conscious of my carbohydrate intake is because a couple of years ago, my doctor diagnosed me with pre-diabetes. According to her, I was shy of only two points before being a full-blown diabetic. So I am always figuring out ways to continue enjoying good food without pushing the limits of my body’s ability to process sugars.

Taking the lettuce out of salad

I am not a fan of lettuce based salads. First, they are too light for me and not very filling, especially since I am a good eater. Second, I am funny about how clean the leaves are mainly when I eat salads out at restaurants.

So I am pleased to drop the boring lettuce and add some weight to my salads. This black olive and tomato salad is very filling with good fats from the olives and the feta cheese adds to the pile. Your skin and hair will thank you for it later. The sweet mini cherry tomatoes are so juicy with hints of tartness. The juices from all the ingredients combined will have you sopping the plate with the fluffy naan wedges.

Overall, this black olive and tomato salad is a great dish for lunch and even a light dinner. Don’t only try black olives, but also green olives or a mix of your favorite olives. It is satisfying and full of nutrients.
